Although born in North Dakota, Uschi grew up in Scandinavia. Prior to her acting career, Uschi worked briefly as a translator in the jewelry trade where she developed a knowledge of German, Italian, Spanish, the three Scandinavian languages, French and English. Her (heavily accented) Swedish is briefly heard in the film Cherry, Harry & Raquel.

Digard burst into cinema in Sweden where she starred in several erotic films, although these would not be considered pornographic by modern standards. In 1966, she returned to the U.S. where she soon began appearing in numerous sexploitation movies and adult magazines.

She was among the best known big bust models in the late-1960s and early-1970s. Her film roles toward the end of this period occurred at an interesting time in the porn industry as films transitioned from softcore to formulaic, minimal plot hardcore. Many of these movies had well-developed and bizarre plots such as Ilsa: She-Wolf of the SS or Female Chauvinists in which Uschi and a bunch of lesbians rob a sylvan sperm bank in a surreal dream scene.

Digart was cast in Russ Meyer's Cherry, Harry & Raquel! to provide a symbolic denouement in the final scene including the death of the male lead after the film footage was lost. She soon became a favorite of Meyer whose obsession with "well cantilevered" woman is legendary. Digart would go on to appear in three more of the films Meyer made in the 1970s.

Later she co-starred in several adult movies with porn superstars such as John Holmes, Candy Samples, and Kitten Natividad during what is sometimes known as the golden era of porn from 1975 to 1983, which was marked by good quality scripts and high production values, with the movies intended for cinematic release rather than video.

As of 2006, Uschi Digard is married and lives in Palm Springs.
